Customers proclaim braised beef brisket best dish ever

Tough times call for comfortable food.

Food that is familiar, doesn’t challenge too much. Providing a soothing throwback to happier times after a brutal review of 401K stock portfolios, for example.

But comfort does not imply compromise in flavor.

It does not mean compromise in standards.

Perfection in comfort may be a harder to attain than ‘perfection’ in some new trend, mainly because comfort by definition has been around a long time, and pretty much everyone knows is when they see it.

So we were pretty happy to find our customers deeming our new Beef Braised entree as perfect comfort.

Best dish ever. They said.

Beef brisket – the ultimate comfort cut of beef. More flavor than chuck, more character than some of the ‘finer’ cuts of beef.

But brisket definitely needs the love.

So I marinated the entire brisket for a day in syrah and port. Till it was a dark purple color.

Then braised it in that same marinade for 5 hours along with browned shallots, garlic and pearl onions. Oh, and some thyme as well.

The result is meat so tender that cutting is really not an option. It just melts.

And a gravy so flavorful, just a bit transports you back to those happier days.

I put the braised brisket and its gravy on top of some house made semolina pasta. And placed some lightly grilled endive on the side.

Really an awesome dish. Comfortable. Perfection. Perfect comfort.
