Crisp little Spanish ‘Coca’ Pizzas

Everyone likes Pizza.

No question.

And lots of different cultures have modified, claimed, ‘reinvented’, or in some other way tried to co-opt Pizza as their own.

We here of course know that Pizza was invented and reached it’s absolute Zenith in a small town in Western New York at a place known as Lena’s Pizza, best eaten at 2:30am Saturday or Sunday morning, after being swept out the door of the local collage hangout at closing time.

That being said, Barcelona has done themselves proud with their rendition, known as a ‘Coca’ in that part of Spain.

 

Catalan Coca Pizzas - no topping

A crispy flatbread crust.

Wonderfully sweet caramelized onions baked onto the crust until lightly charred.

Fire-roasted red peppers, anchovies for those who choose to indulge, and a sprinkle of Manchego cheese.

All melted to sweet perfection.

Nary a tomato in sight.  But they are not even missed. There is so much flavor here.

Perfect with a glass of GranRojo Garnacha red wine from the Tierra de la Castilla region in the heart of Spain.

Tapas at Sol Del Sur Bistro in San Juan Capistrano.  Fun.  Relaxed.  A great deal!
