Takin’ it Slow …

Thanks to everyone who took some time Saturday to enjoy takin’ things slow with us!

Slow braised food, that is.

Roasted for hours and hours at low temperatures.  Till the flavors are deep and rich.

Food that people don’t make so often any more because of the time it takes.

Hours and hours.  Nothing to do but roast and baste and turn things over occasionally.  Till things are falling-off-the-bone tender.

And even better is taking some time to enjoy the slow braised food.

An hour, maybe two, sipping some excellent wine, enjoying some wonderful flavors.  Relaxed and slow.
