We have an outstanding array of Australian wines lined up to taste for this wine tasting dinner!

One by the winemake of the year, some rated 90 pts, and three Shiraz each offering a unique perspective.

Each wine is paired with a few Tapas that are based on some element of native Australian ingredients and flavors.  Some of these flavors, found only in the great Outback and known as ‘Bush Tucker’, are unique to Australia and very rare to experience over here.  Should be fun!

Pillar Box White 2007
Producer: Henry’s Drive Vignerons
Country: Australia
Region: Padthaway 68% and Adelaide Hills 32%
Grape Variety: 56% Chardonnay, 30% Sauvignon Blanc,
14% Verdelho with average yields of four tonnes per acre.
Alcohol Strength: 13% by volume
Description: Pillar Box White has a very pale green straw appearance.  Comprised of Chardonnay, Sauvignon Blanc and Verdelho, each variety contributes its own uniqueness to this blend, whilst careful blending of a portion of cool climate Adelaide Hills fruit adds an additional layer of complexity. The result is an enticing wine which displays lifted aromas of orange blossom, hints of gooseberry and celery.  The palate is a continuation of the fruit flavors introduced by the aroma. These herbaceous and fresh topical fruit flavors are balanced with crisp acidity and enhanced by the soft texture and a lingering finish.
Winemaker’s Notes:  The Henry’s Drive winemaking team, assisted by wellknown Australian consulting winemaker Chris Ringland, are responsible for this lovely white wine. The fruit for Pillar Box White is sourced exclusively from the family’s vineyards in Padthaway, grown in red loam with underlying limestone.
Hen & Chicken Chardonnay 2008

The Vintage: Conditions leading up to harvest were ideal for Chardonnay with moderate temperatures, cool nights and below average rainfall.
The Winemaking: Fruit was hand picked, whole bunch pressed fermented with natural yeasts and aged in new and 2 year old French oak for 8 months with 80% malolatic fermentation.
The Wine: Aromas of citrus and melon and the palate is soft and plush with a cleansing acid finish. Flavours of lemon butter complement the fruit and there are gentle spice and oak hints to add complexity.

The Vintage: The 2008 harvest was ideally suited to Shiraz in Frankland River with warm and dry conditions.
The Winemaking: Fruit was de-stemmed only and fermentation was carried out after 2-3 days of pre-fermentation, cold maceration. Held on skins for 7-12 days the wine was pressed to 30% new and 2-year old French oak. The wine was prepared for bottling after 8 months in oak to preserve freshness and intensity of fruit.
The Wine: Bright crimson in the glass, with a nose of blueberries, gentle spice and white pepper. On the palate, soft berry fruit with briary hints and nuances of aromatic spices of cinnamon and nutmeg. Medium bodied, with a persistent finish.
Pillar Box Reserve Shiraz

Alcohol Strength: 15.0% by volume
Description:  With dark inky color and bright purple edges, the second Pillar Box Reserve, selected from the best parcels of Shiraz is
a rich and densely concentrated wine. The nose displays rich aromas of blackcurrant overlaid with spicy notes, hints of red licorice and dried herbs. The palate is tarry and ripe, with dark berries, fresh redcurrant, cloves and briary, earthy complexity. The tannins are firm, yet the palate is round, velvety and textural, leading into a refined and long finish.
Winemaker’s Notes: Under the guidance of well known Australian consulting winemaker, Chris Ringland, the Henry’s Drive Winemaking team are responsible for this second vintage of Pillar Box Reserve. Together with Mark and Kim Longbottom, they hand selected some special parcels from the Pillar Box Red project to create this wine. The vines are grown in various soil types, including red loam, black loam and deep sand over limestone. The wine is matured using in 85% French and 15% American oak for eight months.
Parson’s Flat Shiraz/Cabernet 2005

yields of three to five tonnes per acre.
Alcohol Strength: 14.5.0% by volume
Description: Parson’s Flat has a dense ripe cherry color, with a purple hue. The nose displays a concentrated array of mixed forest
berries, smoky cigar box, spicy pepper, clove, caramel and mocha. An initial sweet, concentrated explosion of luscious blackberry on the palate leads to savoury spice, coffee bean and liquorice. Cabernet Sauvignon is still evident, contributing some attractive leafy and spearmint/peppermint flavours. Firm and granular tannins leave the mouth with a persistent coating. A finely-tuned blend that allows both varieties to express themselves.
Winemaker’s Notes: Vignerons Mark and Kim Longbottom, along with the Henry’s Drive winemaking team, practice minimal intervention during the winemaking process – resulting in wines of great length and longevity that are a true expression of their vineyard, region and variety. The Shiraz and Cabernet vines are between 10 and 13 years old, and grow in sandy loam over limestone on the hillside and red loamy soil over limestone on the flat. After minimal intervention in the vinification process, the wine is barrel fermented and matured in oak hogsheads and barriques for 16 to 18 months – 80% American, 20% French, 60% new, 40% one year old oak.
