Tincho and Chimichurri – Livin’ Buenos Aires Style

The most popular drink in Buenos Aires right now is called ‘Tincho’. Which is New Age White, a light and semi-sparkling wine, poured through a lime slice into a glass filled with ice.

Outstanding. Let the party begin!
And we got it. Right here.

Along with that, a flat iron steak (so named for it’s shape, not it’s texture), which is a super tender cut of beef from the middle of the shoulder blades. Marinated for a few hours. Then grilled till just on the rare side. Sliced thin and served with the ubiquitous Argentine garlic and parsley sauce called chimichurri.
Our steaks are all from the best – Niman Ranch. Grass fed beef with all the healthy Omega-3s that are lost with enclosures and dry fodder fed cattle.
Served with some couscous and balsamic grilled peppers.

I like this with either the Eponymous Red, or one of the fuller Pinot Noirs, like Rockburn, or even the Vinsobres, a Cotes du Rhone from Perrin & Fils.
Naturally a beer would fill the bill as well.
