Mango Mania

Mangos are in high season now.

So I got a pile of ’em.

Bright yellow, golden even. I understand them to be champagne mangos, but I’m not sure that’s the official name.

Anyways, just perfect. Very ripe, sweet, juicy. And oh so tropical.

I love them many ways, but one of my favorite is grilled. Peeled, sliced, some olive oil, then grilled until slightly caramelized. Outstanding!

Tonite – Mango Mania! Opakapaka (Hawaiian pink snapper), topped with grilled mango slices, a drizzle of mango, lime and cilantro puree, all sitting on top of a goat cheese risotto.
I think the sweet, tropical mango will balance perfectly with the creamy, slightly salty and acidic goat cheese. I can’t wait!

For wines, how ’bout a Sancerre, from Domaine Cherrier & Fils, Sancerre, France, 2007 – by the glass or bottle.
Or maybe a Frogmore’ Creek Unwooded Chardonnay, Tasmania 2006, very crisp and fruity.
Or even a Source Napa Gamble Sauvignon Blanc, Napa Valley, CA 2007. Also very crisp and fruit forward. Also by the glass or bottle.
